Making Tonkatsu Venison Don Buri is easier than you think! The whole dish comes together over the sauce. You can make it yourself (recipe below) or buy it ready made from most asian supermarkets.
All you do is cook sushi sticky rice. Pan sear your diced venison steak so that it is nice and crispy on the outside and pink in the middle. Then toss the diced steak in the Tonkatsu sauce and serve over the rice. Add any fresh greens you like to add more vibrancy/colour and texture. That’s it!

Easy Tonkatsu Sauce
Ingredients
- 2 tbsp ketchup
- 1 tbsp Worcestershire sauce
- 1 tbsp soy sauce
- 1 tbsp sugar (or honey)
- 1 tsp Dijon mustard (optional but recommended)
- ½ tsp garlic powder (optional)
Instructions
- Combine everything in a small bowl.
- Whisk well until the sugar dissolves and the sauce becomes smooth.
- Taste and adjust:
- sweeter → add a little more sugar or honey
- tangier → add a splash more Worcestershire
- richer → add a bit more ketchup
Texture Tip
Authentic tonkatsu sauce is thick and glossy. If you want it thicker:
- add ½ tsp cornstarch slurry (cornstarch + water) and heat briefly, or
- mix in a little extra ketchup.
Quick Ratio Trick
If you want to remember it easily:
2 parts ketchup : 1 part Worcestershire : 1 part soy sauce : 1 part sugar
